Ken Strack
Strack is a second-generation farmer who owns and operates Strack-View Farms with his wife, Jennifer, and parents, Ken Sr. and Margie Strack. The family-run dairy farm has been operating since 1972. Today, they milk around 400 Jersey cows.
The Stracks transitioned to a Jersey herd in 2019 after noticing this breed was more economically and environmentally sustainable than their prior Holstein herd. The Jersey cows produced less manure and consumed less water and feed. Because of this change, the family started producing A2 cheese products about two years ago. The A2 protein is often prevalent in Jersey cattle milk and is usually easier for humans with dairy sensitives to digest.
Strack started cover cropping about four years ago and no-tilling shortly after. Over time, he’s noticed improved soil health and less fertilizer use in his fields.
“No-tilling all of our fields really helps keep the soil in place,” Strack said. “This has been more prominent this year with the large amount of rain we received in spring. No-till practices have kept our soils right where they should be.”
As a new board member, Strack is excited about the opportunity to continue learning and sharing experiences with other like-minded farmers.
